Yields 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Place the listed ingredients into a saucepan, bring to a gentle boil, stirring so the sugar melts. Then, remove from the burner and let it to reach room temperature completely. Pour into a clean bottle, close it and store in the refrigerator, where it will keep for up to four weeks.
For the Premix: Pour all the spirits and syrup in a big jug, allow it to infuse for an hour, then pass it through preferably using a fine cloth, making it fully clarified.
For serving: Pour 85ml of your cocktail base to a cocktail shaker packed with ice, and agitate gently for about 60 seconds to chill. Pour to a frosted cocktail glass or similar, garnish with some cranberries adding the final touch by giving it a light spray of the essential oil above the glass.
